The Labné is a lot like sour cream but only in texture. It's dairy, yogurt based and smooth. It tastes light, very slightly sour and sooo fresh. It's a traditional food in Lebanon that almost every home has, all year long. You can eat it with tomatoes, cucumber, mint, olives, of course some olive oil. You can combine all these condiments or use them separately. In any case you will enjoy the goodness of the Labné.
Here's a fast and very easy way of making it. Not the traditional one but still a valid one.
Buy fat free yogurt at your local store. Make sure it's fresh and made without the human growth hormone RBST. It will say it on the box. Empty the box in a colander lined with strong napkins. Leave it in the refrigerator overnight to extract all the water. Of course there will be a bowl under the colander to collect the water :))) The next day, put the Labné in a bowl and mix it with 2 tablespoons olive oil and salt to taste.
There you go!! you've got your tasty Labné. Enjoy with your choice of bread.
